Using vinegar to make sauces

Chimichurri sauce comes from Argentina and tastes excellent with grilled meat. It’s easy to make and has a delightful mix of flavors. Vinegar is the heart and soul of this recipe. The ingredients required are:

  • 6 ½ cups parsley leaves
  • One tablespoon dried oregano
  • 4 gloves of garlic
  • 2 chili peppers— if you like your food spicy
  • One tablespoon of paprika
  • 1/2 teaspoon black pepper
  • One teaspoon sea salt
  • 1 cup olive oil
  • 1/2 cup Carbonell white vinegar
  • Juice of one lemon
  • 1/2 cup warm water

 

First, chop the parsley leaves, garlic and chilies as finely as possible. Then, add the warm water and mix to soak all the ingredients. After doing this, add the pepper, salt and paprika. Mix again. Finally, add the vinegar, lemon juice and olive oil. Mix well and pour the sauce into a glass container. Leave it to macerate overnight. Enjoy it the following day!

This delicious sauce can be used to marinate chicken, meat and even fish before cooking. Or it can also be used to accompany cooked dishes.
