2 red peppers
2 green peppers
Carbonell Extra Virgin Olive Oil
2 garlic cloves
400 grams minced meat
75 grams grated cheese
2 tablespoons finely chopped parsley
1 chili pepper
Preheat the oven to 200°C.
Cut the peppers in half and remove the seeds.
Heat the olive oil in a frying pan and fry the onion and garlic for 1 minute.
Add the minced meat and fry for 5 minutes until tender and properly cooked; take the pan off the heat.
Stir half the cheese, parsley, chili, salt and pepper to taste through the minced meat.
Fill the pepper halves with the minced meat mixture and wrap each half in aluminum foil.
Bake the peppers in the middle of the oven for approx. 30 minutes; 10 minutes before the end of the cooking time, open the foil and sprinkle the rest of the cheese over the peppers.
Tasty with rice and a salad.
