Good food always ensures a good atmosphere, and at family dinners this is essential for spending some happy moments together. If you’re looking for ideas for a big family dinner, or for an easy family dinner, here are 4 simple and healthy recipes to enjoy with your family.

4 ideas for easy family dinners that will bring a few smiles.

1. Beef carpaccio

The name might make you think it’s not easy to do, but it is. Start off with this easy family dinner by rehydrating some sun-dried tomatoes in water for an hour. While rehydrating, wrap 1/2 kilo of beef in some plastic wrap, and leave it for half an hour in the freezer. Then take the meat out of the freezer and cut it into thin slices. Once this is done, whisk 4 tablespoons of Carbonell extra virgin olive oil with the juice of a lemon, and season the beef. Add a little Parmesan cheese on top, the tomatoes in small pieces, arugula and a little salt and pepper.

2. Eggs Benedict with salmon

An easy family dinner is ideal, and this toasted bread won’t take up much of your time. First put the eggs in water to cook them. Toast the bread, which can be sliced bread or a baguette. Meanwhile, place a couple of avocados in a bowl, squeeze a little lemon and add a pinch of salt. Crush with a fork and mix. When the toasted bread is ready, drizzle with some Carbonell EVOO, before covering with some slices of smoked salmon; then add a spoonful of avocado and, finally, place the boiled egg on top.

3. Turkey brochettes with vegetables

This could be a good idea for a family dinner, because everyone likes brochettes. Just cut the turkey breast into chunks. Slice peppers of various colors, and the onion too. Spear the ingredients on special wooden skewers for brochettes. Then drizzle some Carbonell extra virgin olive oil them to grill the brochettes.

4. Stuffed mushrooms

This recipe is usually a big hit. First, finely chop an onion and sauté in CarbonelL EVOO. Remove the stems from the mushrooms, cut them into very small pieces and add them to the pan. Stir constantly so they don’t stick. Take a piece of bacon, cut it up, and add it to the pan. When you start to sense the aroma of the bacon, add cooking cream until it just covers the mixture. Add a pinch of salt, pepper and nutmeg, and let the cream thicken over a low heat. Meanwhile, grill the mushrooms (1 minute on each side), then place them upside-down on a plate and fill them with the freshly made carbonara sauce.

These recipes are for an easy family dinner, but with lots of flavor. Accompany these recipes with a delicious salad and your family are bound to ask for more! Remember that extra virgin olive oil is the perfect partner for healthy eating. You’re sure to go to bed with a great taste in your mouth!
